Nachos, a popular Tex-Mex dish, was invented out of necessity in 1943 by Ignacio "Nacho" Anaya. When a group of American military wives visited a restaurant in Piedras Negras, Mexico, after closing time, Anaya improvised with what he had on hand: tortilla chips, cheese, and jalapeños. He melted the cheese over the chips and served the dish, which was an instant hit.
